Tried and tested: Mexican bean soup with guacamole

A liquid meal isn’t my favourite kind of fare but one which is more bowl food than soup makes for a happy lunchtime. And if I can make it with mostly store cupboard ingredients combined with fresh foods that can generally be found in my fridge, then all the better.

This Mexican bean soup from the BBC Good Food website was delicious, especially served with the zingy guacamole. It reminded me of my own recipe for a hearty chorizo and black bean soup (also topped with avocado!), for which I have fond memories, not least because I made it on more than one occasion for lunch and took it out to the car for my husband to eat whilst my little boy napped (he could never be transferred from car to bed so many an hour was spent sitting in the car whilst he napped!).

I served it, in the photo, with some corn muffins but have also had it with tortilla chips, grated cheese and tomato salsa.
