Recipe of the week: Mediterranean vegetable tray bake with salsa verde

Here I am again with a tray bake as I know you love them as much as I do!

Any leftovers from this one make for a perfect lunch, eaten at room temperature.

The zesty, herby salsa verde brings a freshness and vibrancy to the dish and the spicy chickpeas a welcome crunch. There’ll be chickpeas leftover so store them in an airtight container for moreish, healthy snacks another day.
