As Autumn has set in and Winter is fast approaching, thoughts are starting to turn to soups. My recipe of the week is this comforting smoked haddock and sweetcorn chowder.
Your store cupboard and freezer will come into their own with this recipe (one of the reasons it was on my menu last week for my end of the month challenge) as it calls for a potato, an onion and a tin of sweetcorn. The recipe states a fillet of smoked haddock but I regularly use a couple of pieces of frozen smoked haddock from the supermarket to make it cheaper.
