Recipe of the week: Roast cauliflower, chickpea and spinach curry

Roast cauliflower curry

Last week I said that when I’m cooking with veggies, I like to travel to South America or Asia. Last week I visited South America and this week I’m heading to India! 

I think cauliflower is so much better when it is roasted, boiling somehow spoils the texture and enhances the bitterness. So for this curry, I first roast the cauliflower in spices and then add it to the sauce.
