When trying to introduce more variety into your meals each week, it can feel overwhelming. But there is no rule about how you do this. You can find a way which feels achievable for you. 

One way you can add variety is by picking a different vegetable each week to add to your usual shop.  

Then, at the end of the week, when you have a few bits and pieces in the veg drawer that need using up, these vegetable pakoras are a great option for something a bit different to the usual soup and stir fry. You really can use pretty much any vegetable.
