Chipotle spiced beans

There is always a tin of beans in the cupboard or a box in the freezer (from a batch of dried beans which I have soaked, cooked and portioned off) because I know that I can always create something tasty and nutritious with them at a drop of a hat. Think cancelled plans or extra mouths to feed that you weren’t expecting. 

Beans are handy for all sorts of dishes but some of my favourites to make are pimped up baked beans, like these chipotle spiced beans. These are fab with a jacket potato but you could also use them to make burritos or nachos or simply served them on toast.

It’s well worth cooking extra whilst you’re at it so you have some in the freezer. Work smarter not harder!
