Lime and mint granita

One of the many simple ways we can tackle food waste is by making the most of the ingredients we’re buying before any of it heads to the bin. And that’s exactly what you do when making this zingy and refreshing lime and mint granita. We make use of the whole lime and bunch of mint, stalks and all. 

Great on its own to cool you down on a hot day but even better when served with a fruit salad, made using all those fruits lurking in the fruit bowl that have gone a little beyond ripe and that nobody wants to eat! And to really make sure nothing goes to waste, why not bake off some leftover tortilla, sprinkled with cinnamon, to add a little crunch?
