This creamy, fragrant and lightly spiced Kerala prawn curry is straight-forward and quick to prepare. You can also make the sauce in advance, finishing it with the prawns and veg at the last minute. It will only taste better with time.
When serving this for my family, I cook the prawns and vegetables separately to the sauce, allowing my children to dip into the sauce if they wish to try it then adding as much or as little of it as they want to their bowls.
