Beany mackerel fishcakes

That great store cupboard staple, the white bean, is put to use in these fishcakes as an alternative to potato. I use smoked mackerel in mine (my preference), but you could grab a tin of mackerel from the store cupboard whilst you’re picking out the beans.

Serve with my lighter take on tartare sauce and some green veg for a delicious lunch or light tea.
