Whether you’re doing Veganuary, looking for something a little lighter after the feasting or simply wanting to change up the flavours in your meals after Christmas, my pulled mushroom burritos are just the meal to try. 
 
When it comes to plant-based cooking, lentils, beans and mushrooms are my favourite base ingredients. Here, the meaty mushrooms take on all the flavours of pulled pork. Combined with creamy beans and avocado, a zingy salsa and roasted sweet potato and your tastebuds are going to be really happy!
