Recipe of the week: Roast cauliflower, chickpea and spinach curry

I feel like it has been too long since I shared a curry recipe!

Other than a dhal, this is probably one of my favourite veggie curries. You can take your pick from two recipes, one using fresh cauliflower and a variety of spices, the other a store cupboard hero made using frozen cauliflower and spice paste from a jar.

Both easy to make and delicious, and no apology needed if you choose to use the spice paste, it’s one of my favourite cheat ingredients.
