Recipe of the week: Spanish-style rice

Within the confines of our own four walls, we refer to this dish as paella, but as it isn’t authentic, I feel like a fraud calling it that in public and wouldn’t want to face a backlash akin to that launched on Jamie Oliver. So, this is my Spanish-style rice and it’s a family favourite, one of the few mixed dishes I can get away with serving to my children. 

I always have a range of rices in my cupboard as well as chorizo and a jar of roasted peppers in the fridge and chicken in the freezer so it’s a great store cupboard dish.
