Recipe of the week: Jambalaya

‘Son of a gun, we’ll have big fun on the bayou.’

Jambalaya is a one-pot dish originating from Louisiana and contains a variety of meat, seafood, vegetables, rice and spices. It traditionally makes use of what was available and is subsequently one of those dishes that can vary from family to family and even day to day. Taking your time over the cooking whilst drinking a beer and singing a song would be the authentic way to prepare this dish.
