I’m just going to come out and say it. Soup doesn’t really float my boat! I struggle with liquid meals and will go to great lengths to find ways to use up vegetables and other ingredients that don’t involve turning them into soup.
That said, every so often, I have a craving for a substantial, protein filled, super tasty bowl of comfort. And, this smoky black bean soup is one of the few that I enjoy. I think probably because it’s closer to a stew than soup!
