I see courgette gluts in our futures!
My lemon and mint courgette with beans is a quick and easy side dish to help you use up some of them.
It goes well with fish, chicken, roasted vegetables and halloumi. One to try next time you fire up the BBQ and will hold up well if transported to a picnic.
Any leftovers are delicious served on a slice of sourdough toast (generous grating of Parmesan optional but highly recommended!).
