When I was doing my festive meal planning, I wanted to include a curry. I noted down turkey curry but it wasn’t sitting well with me. I already had more meat in the mix than normal, most of which was turkey. I couldn’t face any more turkey and I hadn’t even eaten any!
So, this is what I’ve plumped for instead. A light, fragrant and totally delicious Kerala prawn curry. I can make the sauce in the morning or the day before and the flavour will develop as it rests and I get on with other things. when we’re ready to eat, I can reheat the sauce, add the veg and prawns and it’s done.
