If I were to pick just one dish to represent me and the work I do, it would have to be my version of bibimbap.
Start with some rice, add to it a protein of your choice (leftover roast meat is a great option), an egg, some little bits of raw and/or cooked vegetables that need using up, some fresh herbs, seeds and a dressing and, with minimal time and effort, you’ve got yourself a feast from what might otherwise have gone to waste.
