Recipe of the week: Lentil and quinoa ragu

Lentil quinoa ragu

It’s at this point in January where my head needs something easy to prepare and my body needs a hug in a bowl! 

My lentil and quinoa ragu ticks both boxes. It’s a very simple dish with just a few ingredients which is great to batch cook so I can have some to hand in the freezer for whenever the need arises.  

I like to serve it with cheese on toast or a cheese toastie for extra comfort factor but it could just as easily be eaten with a salad, pasta, gnocchi, a jacket potato or turned into a bake.
