This is my version of a vegetarian cottage pie, with a lovely level of spice to maximise the comfort factor which is much needed in this post-Christmas period.  

You can batch cook the filling and freeze some or you could make up two pies and freeze one. Having easy meals in the freezer is also something I need at this time of year.   

Take a look at what’s left over from Christmas in your veg drawer and turn it all into something delicious!
