When deciding what to eat, I regularly put myself first. Yes, I ask the children if there’s something they’d like to go on the meal plan and I make sure their favourite meals are served often, but the majority of the time, I choose meals which bring me joy and then consider how to serve those meals so everyone is able to eat well.
So, with this chipotle and lime chicken with avocado salad, I would serve it family-style in several dishes for everyone to help themselves. I would leave some chicken plain and cook it off before cooking the marinated meat. I would make up the salad but also lay out the salad ingredients on a plate for the children to explore along with any familiar vegetables I think might be needed. I’d include some lime wedges for them to squeeze on their food (or just lick!).
