Another easy way to make a small change to your meals is to replace some of your minced meat with lentils in a Bolognese or chilli (you could gradually reduce the meat until it becomes a fully veggie meal), add broccoli and cauliflower to a macaroni cheese, or pulses and veg to your curries.
Here I’ve combined lentils with chicken to make a tasty curry but you could also add spinach or cauliflower. Make it your own or use up what you’ve got in the fridge and freezer.
