An easy way to start to make a change is to pick just one vegetable that you wouldn’t normally buy and add it to your weekly shop. Each week, choose a different ingredient. Even better if you choose something that’s in season.
This way it doesn’t feel daunting, and you slowly get used to cooking with the new ingredients.
You don’t even need to think up new dishes to cook, simply add your extra ingredients into familiar dishes or try swapping out some of your regular accompanying vegetables instead of always opting for the same one.
