When it comes to cooking with my children, I usually opt for getting them to help prepare a meal because it opens up more opportunities for learning – learning about new and unfamiliar foods, how to prepare a meal and what a balanced meal looks like.
Baking is fun though and the end result is more likely to be eaten! Normally we’ll think sweet things when baking but why not try something different next time and go savoury?
Muffins are a great option for baking with children as they’re quick and simple to make. They make great snacks and, as they freeze well, you can batch bake to keep you stocked up for a while.
This recipe uses courgette, spinach and cheese but it is incredibly versatile. Swap out the courgette and spinach for any vegetables you like or whatever needs using up. Carrot, parsnip, celeriac, peas, sweetcorn, cauliflower and broccoli are all good contenders. They’re never the same twice in our house!
