This is a cheat version of a kedgeree which uses steamed rice and those little packs of smoked salmon trimmings you can now find in lots of places. There’s no poaching smoked haddock in milk and laboriously cooking the dish, making it perfect for a weeknight speedy meal.
I love salmon trimmings for cooking. I wouldn’t normally cook with smoked salmon as it’s too expensive and luxurious for that, but the trimmings are little bits which would normally go to waste as a result of the packaging process so they don’t look the best but you’d never know once combined into your dish.
