Roasting with spices and then using it in a curry is my favourite way to eat cauliflower. It lends itself so well to taking on the flavours and is wonderfully comforting.
I’ll usually make the process easier by roasting the cauliflower for this curry on another day when the oven is on and either storing it in the fridge or the freezer until needed. I then head to the store cupboard for the rest of the ingredients.
