We’re looking after a friend’s allotment whilst they’re away this summer and have been enjoying the fruits of their labour but, the courgettes are coming thick and fast!

One of my favourite ways with courgettes is this burger. They’re simply grilled with the halloumi and served with a punchy mayo and herby salsa.
