When I worked in an office, this noodle salad used to be one of my favourite packed lunches because it holds up well in a box when made the night before.
There’s minimal effort and cooking involved plus it’s a relatively freeform recipe in which you can vary the ingredients you use depending on what you have left to use up.
Plan to have it for tea one night this week and make extra so you can feel smug the next morning knowing you’ve got lunch sorted!
