I rarely tire of chilli, but if you’d like to give this batch cook a new lease of life, I’d recommend giving Mexican lasagne a try. A Mexican twist on the Italian comfort food classic.
Layers of chilli (veggie and/or meat) and corn tortillas, topped with a spiced cheese sauce. Simply serve with a fresh and zingy salsa (plus plain cucumber and tomatoes for the kids if you’re in our house).
