Mint is my favourite herb so it had to appear in my list of star ingredients at some point.
It is a fantastic antioxidant and it’s anti-inflammatory compound is said to be good for calming digestion, easing headaches as well as cold and flu symptoms*.
Mint is really versatile for use in savoury and sweet dishes as well as drinks. In fact, today is international tea day, so a cup of scrappy lemon and mint tea (made using mint stalks and lemon peel) will definitely be on the cards.
I love it not just for it’s flavour and versatility but also because it is one of the few herbs that I have managed to grow in my garden and which comes back year after year!
Once it starts growing in my garden, green flecks of mint will adorn most of my meals. A taste of summer.
