I enjoy using roasted root vegetables for wintery salads, one of my favourites is my warm root veg salad with lentils and halloumi or feta.
This salad, also using root vegetables, is very much inspired by the flavours and colours of Mexican food, which I adore, using some quite British ingredients.
Plus, I’m sneaking in here another way to use up bread – the crispy tortillas are perfect for that lonely couple that have been hanging your bread board a little too long!
