I know that anyone growing courgettes in their garden or allotment are now starting to face a glut. Here are some recipe ideas for putting your courgettes to good use.
You could also substitute courgette in my recipes for baba ganoush, feta stuffed Romano peppers and aubergine and Gochujang roasted cauliflower.
