I know it isn’t really soup weather but I just can’t help myself at the moment. They’re the perfect quick and nutritious lockdown lunch which can be made with store cupboard ingredients topped up with bits from the fridge.
I always have carrots in the fridge, I always have red lentils in the larder and I always have a craving for curry. The answer? Curried carrot, red lentil and coconut soup with a perky lime pickle yoghurt.
