My week in meals – w/c 15/09/19

I haven’t eaten scampi in many, many years but this week, inspired by a friend, I made fish tacos using scampi. It brought back some childhood memories and, combined with some zingy and spicy slaw and avocado, it hit the spot for a quick and easy weeknight meal!

Thursday Veggie night Vegetable tagine with couscous

Friday Huevos rancheros
Saturday Family mealtime Toad in the hole, peas and carrots
