My week in meals – w/c 16/06/19

This week welcomed the return of the salad, with a warming stew in the middle! Plenty of store cupboard ingredients and fresh flavours as well as possibilities for batch preparing. I’m looking forward to indulging in more salads over the next couple of months.

Tuesday Speedy chorizo and butterbean stew with toasted sourdough

Wednesday Fish night Smoked mackerel, roasted red pepper, fennel and orange salad with roasted baby potatoes

Thursday Veggie night Puy lentils with chargrilled harissa aubergine and pomegranate molasses, feta and flatbread

Friday Moroccan style lamb kebabs, baba ganoush, houmous, pickled cucumber, grated carrot, grilled Romaine lettuce, harissa yoghurt and flatbread
Saturday Family mealtime Lunch out with friends
