This is how easy it is to make use of your overripe bananas. One ingredient banana ice cream.
- Peel any ripe bananas and slice into rounds about 10cm thick.
- Lay on a tray to freeze.
- Once frozen, you can put the banana in a Tupperware until you need it.
- Put the banana in a blender and blitz. It makes an awful noise to start with but if you wait long enough it will break down and then come together as a lump of ‘ice cream’.
- Transfer to a bowl and enjoy guilt free banana ice cream.
OK, you’ve got the hang of that, now go bananas! You could try:
- Banana and peanut butter (pictured above, add peanut butter just before the ice cream comes together as a lump)
- Banana and choc chip (stir through chips at the end)
- Banana, cinnamon and raisins (stir through raisins at the end)
- Banana and frozen blueberries (berries go in at the beginning with the banana)
- Banana and frozen cherries (cherries go in at the beginning with the banana)
- Banana and frozen forest fruits (fruits go in at the beginning with the banana)
- Banana and frozen strawberries (berries go in at the beginning with the banana)
- Banana, dried mango, dried pineapple and coconut shavings (chop dried fruit into manageable pieces and stir through at the end)
- Banana and Christmas mincemeat (add a big spoon once the banana ice broken up)
