Leftovers deserve your love and attention. In fact, I’d go as far as to say that you need to start preparing extra just so that you can have leftovers available!
Leftovers from a meal make for a quick, easy and delicious breakfast, lunch or dinner the next day.
Leftover rice and veg fried up and topped with some chilli, seeds and an egg is one of my favourite breakfasts at the moment. Ready in minutes.
A small portion of last night’s dinner can be re-heated for lunch. Or some leftover veg and potatoes turned into an omelette. The roast veg you’ve got left can be transformed into a salad along with some fresh salad bits, a batch prepared dressing and some feta. What about a few slices of Sunday’s roast chicken for a sandwich and what’s left of the carcass for tomorrow’s soup?
Last week’s stew becomes this week’s pie or pasties. This weekend’s BBQ leftovers (who am I kidding, BBQ season is long gone!) become today’s BBQ beans with jacket potatoes.
With a little bit of imagination (and a thoughtfully stocked store cupboard), leftovers can be even better than the original meal.
