When, one Saturday morning, we were picking my son’s school lunches for the following week, we noticed that pudding one day was pineapple upside-down cake. My husband and I both turned to each other and without saying a word we knew what each of us was thinking.
Him: I haven’t had pineapple upside-down cake for years, will you make one please?!
Me: I’ve got all the ingredients in the cupboard, I’m going to make one for after tea.
It’s a retro dessert but one which will be enjoyed, I’m sure, by generations to come.
I used this BBC Food recipe which worked perfectly and was delicious with custard. It made a really big cake so some went in the freezer for when we got another craving.
Shame I only had a small tin of pineapple in the cupboard – make sure you have a big one to hand when baking it!
I was pleased to see that no glace cherries featured in this recipe, though opinion over them was divided in our house. What are your thoughts – glace cherries on pineapple upside-down cake or not?!
