I absolutely love them! The rest of the family don’t share my passion, though H is coming round to the idea and starting to fight me for some of them.
I make use of leftovers at any mealtime depending on what’s left, how much there is and what we’ve got on the meal plan, but if there’s only a small amount left, I’ll most likely keep it for myself for breakfast.
My breakfasts are a great source of amusement – as we finish tea, there’ll be a comment of “look mummy, you can have this on your toast in the morning” or “oh no, mummy’s going to be upset there’s nothing left for breakfast” then in the morning “what are you having on toast this morning, rice?!” (no I don’t eat rice on toast) or “you’re having bulgar wheat salad for breakfast…weird”!
Some of my favourite things to have on toast are veggie curry, bean dishes and ragus. Many are improved with the addition of an egg or some cheese. Other go tos using leftovers are fried rice and frittatas.
Why should we just have toast with jam or cereal, porridge, granola and muesli for breakfast? Being a savoury girl, they’re just no my cup of tea, and actually I feel much better and am fuller for longer eating a small slice of multigrain toast with leftovers that includes plenty of veg and when there are no leftover, scrambled egg with spinach and tomatoes.
