If you’re looking for something a bit different to do with your potatoes, then I can highly recommend this Bombay potato salad recipe from the Jamie Oliver website. It’s a colourful mix up of Bombay potatoes, roast potatoes and potato salad.
The recipe suggests serving it as an alternative to roast potatoes with your Sunday roast or as an accompaniment to a curry. I served it with baked salmon, roast spiced cauliflower, green beans and a lime pickle yoghurt. Delicious!
The recipe was simple to follow and the dish easy to make. The only change I made was the addition of some toasted flaked almonds and roasted peanuts, because I love nuts and the crunch that they provide.
