Sunday’s meal was meant to be a few minutes prep work and let the oven do the rest but it didn’t turn out that way, all because of some old lentils refusing to cook. No way I could serve them. So, plan b into action. I knew I had some dhal in the freezer so that went in the microwave. I always have carrots in so I whipped up a carrot salad and shaved some red cabbage that needed eating up. Strained the liquid from the lentils to have as a gravy and there was a meal on the table only a little later than planned. I regularly teach my clients about the virtues of a well stocked store cupboard, fridge and freezer and its times like this that they really come in handy.
