Monday’s dinner didn’t go to plan – we were going to have fishcakes but the jacket potatoes I got out of the freezer were very wet once defrosted and the cakes wouldn’t hold together. I decided to try my luck squeezing out the excess liquid and pressing the mixture into a cake tin. Success! It saved me a tonne of time and energy making a giant fishcake that I’m going to be doing it this way in future.
