Food is never far from my mind, and anyone who knows me, will tell you that I relish a food-related challenge.
I don’t always plan lunch, usually that’s fine as there are plenty of bits that I pick up especially for lunches or there are leftovers and batch prepared ingredients to put to use, but sometimes it comes to lunchtime and there appears to be nothing to eat.
Whilst my husband would start checking out delivery options on his phone at this point because “there’s nothing to eat”, I take this as a test of my skills to quickly pull together something tasty and nutritious. I grab my phone to check my list of what I’ve got in the fridge, freezer and store cupboard as there’s surely some magic I can perform! It’s very rare that I can’t.
