A quick, easy and versatile pickle. Works well with carrot ribbons too.
|Ingredients||Equipment to have ready|
|For the cucumber:||Chopping board|
|1/4 cucumber, halved lengthways and thinly sliced or ribboned using a speed peeler||Sharp knife or speed peeler|
|1/2 tsp sugar||Measuring spoons|
|2 tsp rice vinegar||Spoons for mixing|
|Pinch of salt||Mixing bowl|
- Put the sugar, rice vinegar and a pinch of salt in a mixing bowl and stir to dissolve as much as possible.
- Add the cucumber and coat in the pickle liquor.
- Set aside for at least 15 minutes, stirring occasionally. If you can leave it longer (in the fridge), it will be all the better for it.
