A quick, easy and versatile pickle. Works well with carrot ribbons too. 

Serves 2

Ingredients Equipment to have ready
For the cucumber: Chopping board
1/4 cucumber, halved lengthways and thinly sliced or ribboned using a speed peeler Sharp knife or speed peeler
1/2 tsp sugar Measuring spoons
2 tsp rice vinegar Spoons for mixing
Pinch of salt Mixing bowl


  1. Put the sugar, rice vinegar and a pinch of salt in a mixing bowl and stir to dissolve as much as possible.
  2. Add the cucumber and coat in the pickle liquor.
  3. Set aside for at least 15 minutes, stirring occasionally. If you can leave it longer (in the fridge), it will be all the better for it.
