A quick, easy and versatile pickle. Works well with carrot ribbons too.
|Equipment to have ready
|For the cucumber:
|1/4 cucumber, halved lengthways and thinly sliced or ribboned using a speed peeler
|Sharp knife or speed peeler
|1/2 tsp sugar
|2 tsp rice vinegar
|Spoons for mixing
|Pinch of salt
- Put the sugar, rice vinegar and a pinch of salt in a mixing bowl and stir to dissolve as much as possible.
- Add the cucumber and coat in the pickle liquor.
- Set aside for at least 15 minutes, stirring occasionally. If you can leave it longer (in the fridge), it will be all the better for it.
