Energy balls

What do you find yourself grabbing if you have a mid-morning or mid-afternoon slump or fancy something when you’re sat in front of the TV in the evening?

Why not try swapping your usual snack for some energy balls? These are synch to make and will sit in the fridge for a week or so. A great batch prepare snack and that perfect combination of good for you but tasty!

Makes around 20-24

Ingredients Equipment to have ready
100g oatmeal (or use oats and blitz them a little) Large mixing bowl
35g walnuts, blitzed a little/crushed Large spoon for mixing
1 tbsp ground flaxseed Teaspoon and tablespoon measures
1 tbsp chia seeds Baking tray
40g goji berries (or you could substitute for dried cherries or blueberries)
2 tsp ground cinnamon
40g dark choc chips
140g almond butter (or smooth peanut butter)

Method

  1. Put all the dry ingredients in a large mixing bowl and mix to combine.
  2. Add the almond butter and mix well to combine and bring the mixture together.
  3. Using your hands, form the mixture into small balls (approx. 2cm in diameter/chocolate truffle sized balls) and place on the baking tray.
  4. Cool in the fridge for an hour before transferring to an airtight container and store in the fridge. If you can resist them, they’re best left a day before tucking in!
