A quick, easy and versatile pickle. Works well with carrot ribbons too.

Ingredients | Equipment to have ready |
For the cucumber: | Chopping board |
1/4 cucumber, halved lengthways and thinly sliced or ribboned using a speed peeler | Sharp knife or speed peeler |
1/2 tsp sugar | Measuring spoons |
2 tsp rice vinegar | Spoons for mixing |
Pinch of salt | Mixing bowl |
Method
- Put the sugar, rice vinegar and a pinch of salt in a mixing bowl and stir to dissolve as much as possible.
- Add the cucumber and coat in the pickle liquor.
- Set aside for at least 15 minutes, stirring occasionally. If you can leave it longer (in the fridge), it will be all the better for it.
