Recipe of the week: Oat pancakes

We’re big fans of American pancakes in our house and they’re a regular weekend staple. On the rare occasion that there are some leftover, I freeze them. 
 
Having them in the freezer means I can grab them for breakfast, when either child would like a change from their mid-week staples, for pudding or even for after school snack. 
 
Adding oats to the pancake recipe makes them more substantial, sustaining and nutritious.
