Curried coleslaw

One of the questions I get asked a lot is what to do with leftover cabbage. I know you all know about coleslaw and are probably already making it on occasion, but it really is a great way to enjoy and to use up this seemingly endless vegetable. 

The way to ring the changes though is to mix up the crunchy vegetables you pair with the cabbage and best of all to travel the world with your dressings. 

I love to visit Thailand with the end of a peanut butter jar, Korea with the tub of Gochujang that is always in the fridge or Mexico with mint, lime and chilli. Here, though, I’m jetting off to India with my curried coleslaw. Pack your bags if you fancy joining me!
